Sweet Potatoes w/Pineapple & Marshmallows

Ingredients:

8-9 medium sized sweet potatoes
1 cup Brown Sugar
1 can chunk pineapple in juice
1 cup mini marshmallows
8 - 10 maraschino cherries


Preparation:

Boil potatoes until semi-soft and let cool. Cut potatoes into 1" to 1.5" cubes. Spread potatoes in ungreased 9"x 13" glass baking dish creating 2 layers of potatoes. spread the pineapple chunks and marshmallows over the potatoes, now pour the juice from the pineapple over the entire surface. sprinkle the brown sugar liberally over everything (add additional brown sugar if desired). place a few cherries sporadically over surface. Bake at 425 degrees until juice begins to boil then back off temperature to 350 until marshmallows are lightly browned.
