Preparation:
Cut the tops open on each pepper and remove the seeds and veins. Using a tablespoon of oil heat in a covered pan stirring and flipping until peppers are lightly softened. Set peppers aside to cool.
Place chunks of sausage into pan (If the sausage is in casing, squeeze out of casing before cooking) and chop into small 1/2" pieces while cooking (not as small as ground beef). Drain all oil if any and add garlic and oregano to sausage. Spread sausage to cover bottom of pan and cover with a healthy layer of bread crumbs and mix in. Do this two times and continue cooking until sausage is browned. Move to a large mixing bowl and immediately add mozzarella and parmesan mixing well.
Preheat oven to 350, Stuff each pepper packing mixture deep into pepper until pepper is stuffed just short from the end. Line each pepper side by side in a glass baking pan and bake for 30 minutes.
