Beef Jerky

Ingredients:

1/4 cup soy sauce
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (powder, not salt)
1/2 teaspoon onion powder (powder, not salt)
1 teaspoon liquid hickory smoke
1 lb any kind of meat you would like to use
lemon pepper


Preparation:

Mix all above ingredients except the meat and lemon pepper together. Cut meat with grain 1/8" to 1/4" thick. Place meat into marinade for at least 24 hours.

layout strips of meat onto foil or wax paper and season with lemon pepper on both sides. Place toothpicks through one end of each strip of meat. Place a layer of foil at bottom of oven to catch drippings (do not cover heat vents at sides of oven). Hang each strip of meat by toothpick from oven rack (keep meat from touching).

Set oven between 150 and 200 degrees for approximately 4 hours. Do not allow meat to completely dry.

NOTE:
Drippings will smell bad for about an hour or so. Everything is OK.
