Spicy Chickpea Chicken Bowl

Ingredients:

1 large chicken breast or 2 average size breasts
1 small onion diced
1 7oz can of roasted chilies
1 15oz can of garbanzo beans/chick peas (do not drain)
1 15oz can of white northern beans (do not drain)
1 14.5oz can of diced tomatoes (drained)
1 tsp garlic salt
pinch of salt (literally)
pinch of cumin (literally)


Preparation:

Cut chicken breasts into small to medium sized cubes, set aside.
Mash (puree) garbanzo beans into a paste, set aside.

In a large skillet on medium heat mix white northern beans, onion, can of roasted chilies, can of diced tomatoes, the mashed/pureed garbanzo beans, and chicken.

Add 1 tsp garlic salt, pinch of salt, and pinch of cumin. Stir on high heat for approximately 2 minutes then turn to low and simmer covered for 30 minutes stirring occasionally.

Warm up tortillas and eat it like a taco or cut tortillas into small strips and fry til crispy and put them on top and eat like soup.
