Preparation:
Beat eggs with sugar, blend in other ingredients (except walnuts)
Pour onto a well greased cookie sheet or jelly roll pan
Sprinkle with nuts if desired
Bake 15 minutes at 375
Sprinkle powdered sugar all over a clean cotton dish towel
Remove cookie sheet from oven and turn over onto dish towel
Immediately roll lengthwise including towel and cool completely (very important)
Blend filling ingredients together in mixing bowl until mixture is creamy
Unroll pumpkin log and spread filling evenly. Re-roll and refrigerate using wax paper
NOTE: 1 Can pumpkin will make 3 rolls (rolls freeze very well) |
