Chocolate Covered Rice Crispy Peanut Butter Balls

Ingredients:

2 cups creamy peanut butter
1 pound powdered sugar
1 stick butter softened (do not melt)
21/2 cups rice crispies
11/2 bags chocolate chips
1/2 bar paraffin wax

 

Preparation:

Mix peanut butter, powdered sugar, butter and rice crispies together until well mixed. Roll mix into teaspoon size balls insert a toothpick into each ball and place onto tray lined with wax paper. Place tray into freezer to chill.

Using a double boiler pot, place chocolate chips and paraffin wax into top portion of the pot making sure there is always plenty of water in the lower portion of the pot. Heat over a medium flame until chocolate has completely melted.

Dip the chilled balls into the chocolate using the toothpick to completely cover with chocolate. Place covered balls into refrigerator until chocolate is hardened and ready to serve.
